What we can state with confidence, based on the results - The end product is very rich source of silymarin – 3.05g/100g, expressed as silibinin. The total polyphenol content in it is 2796.4 mg/100g, and their antioxidant activity measured by ORAC and HORAC methods is 1425.8 µmolTE/g and 192.6 µmol GAE/g, respectively. The finished product is also very rich source of protein - 20.5 g/100g, it also contains 10.8 g/100g oil, natural source of Vitamin E.
Based on these results, we can say our product is a rich source of beneficial protein, lipids and fibers. The contained substantial amount of silymarin makes it suitable for use as a hepatoprotective functional food or food supplement.
